Gluten Free Double Chocolate Cookies

I’ve always been a slightly-underdone-in-the-middle cookie girl and one of the hardest parts of switching to gluten free cooking and baking was all the super dry cookies that were coming out.

I was so excited the first time I took a bite of these cookies and realized they had the perfect slightly-underdone texture.

This originally was a regular gluten recipe so if you have no need to be gluten free you can go ahead and swap out the gluten free flour for regular all purpose flour and you’ll get the same results.

But for those gluten free-ers that need a soft and delicious cookie, you’ve come to the right place.

I like to bake these cookies for 8 minutes to get them soft and still a little underdone in the middle but if you prefer firmer cookies or your oven bakes differently you may want to adjust the time.

I would suggest starting at 7 minutes and then checking them every minute to see if they are to your liking.

I have no idea where this recipe originated. I’ve had it in my recipe binder for as long as I can remember.

Chances are I got it from a friend who got it from a friend who got it from their mom or grandma or something like that.

I find this a great recipe for when we have company coming over. It’s never failed me yet and I often double the recipe to make a lot of little cookies.

We often have a group of 30+ adults and kids over each week and even with a doubled recipe these cookies don’t last long.

The best part is, if you make them gluten free they don’t taste like it (because you never want gluten free food to taste gluten free).

Double Chocolate Cookies

Ingredients

  • 1 cup margarine
  • 2 eggs
  • 1 1/2 cups sugar
  • 2 tsp vanilla
  • 2/3 cup cocoa
  • 1/2 tsp salt
  • 2 cups flour (gluten free flour if you want to make them GF)
  • 3/4 tsp baking powder
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350°F.
  • Mix all the ingredients together except the chocolate chips. Once well combined add chocolate chips.
  • Form cookies on cookie sheet and bake for 8 minutes.
